1. The softness of the scraping head affects the cleanliness of the dough, and in the cutting and mixing process, it harms the speed and combination level of the cutting and mixing. After testing, the scraping head is too hard to harm the application rate of scraping the dough and the rate of cutting and mixing. Of course, this does not mean that the scraper is softer and higher. The use of the scraper is different, and the strength required is also different. Usually, hard dough, such as cookies, must be matched with a scraper with a harder blade; like a chocolate mousse paste. To be soft and "sensitive", it must be matched with a scraper with a soft blade.
2. Note that the joystick must be long and strong enough to be more effective in application. The feel of the rocker is more objective, but a thin and short rocker cannot be used. If the rocker is made of poor-quality plastic or wooden furniture, it is not only easy to cut hands, but also has poor bearing capacity and is easy to be broken.
3. The scraper can be divided into an integrated scraper and a separate scraper. One-piece scraper, the rocker is usually used with rigid ribs, so the scraper is relatively heavier. Separate scraper, more common plastic/wood split rocker, with many patterns and light knife, but needs to be separated and cleaned.
